- 0.5 lb Bold Barbecue Doritos (approximate; enough for the chicken nacho base and layers)
- 1.5 cup Tex-Mex shredded cheese (divided)
- 0.5 cup Monterey Jack cheese (shredded)
- 0.5 lb Ground beef (cooked and taco seasoned)
- 0.5 lb Cooked chicken (shredded or diced)
- 0.5 cup Shredded mozzarella cheese
- 0.5 cup Smoked cheese (shredded; e.g., smoked gouda or cheddar)
- 2 Green onions (chopped)
- 0.25 cup Red onion (diced)
- 0.5 cup Bell peppers (mixed red, green, and yellow; chopped)
- 0.25 cup Black beans (canned, drained and rinsed)
- 2 tbsp Black olives (sliced)
- 0.5 cup Tomatoes (freshly sliced or diced)
- 0.25 cup Corn (kernels)
- 1 Jalapeños (freshly sliced)
Steps
- 1
Prepare two air fryer baskets or liners. In the first, create a base layer with Zesty Cheese Doritos. In the second, create a base layer with Bold Barbecue Doritos.
- 2
Top the Zesty Doritos with Tex-Mex shredded cheese. Top the Barbecue Doritos with Monterey Jack cheese.
- 3
Add a layer of taco-seasoned ground beef over the Zesty Doritos. Add a layer of cooked chicken over the Barbecue Doritos.
- 4
Add another layer of cheese to both: use more Tex-Mex cheese for the beef side and more Monterey Jack or Tex-Mex for the chicken side.
- 5
Add a second layer of Doritos to both baskets, followed by a layer of shredded mozzarella cheese.
- 6
Sprinkle chopped green onions over the beef nachos and diced red onions over the chicken nachos.
- 7
Distribute the medley of chopped red, green, and yellow bell peppers across both baskets.
- 8
Add a final small layer of ground beef to the beef side and more chicken to the chicken side.
- 9
Layer on more cheese: use smoky cheese for the chicken side and Tex-Mex cheese for the beef side.
- 10
Sprinkle black beans over the beef side and sliced olives over the chicken side.
- 11
Add sliced tomatoes and corn kernels to both baskets.
- 12
Finish with a final topping of cheese (Tex-Mex and smoky cheese respectively) and freshly sliced jalapeños.
- 13
Place the baskets in the air fryer and cook at 375°F (190°C) for 10 minutes until the cheese is melted and bubbly.
- 14
Carefully remove the nachos from the air fryer and transfer to a large serving platter.
Notes
The recipe makes two different styles of nachos simultaneously. You can customize the toppings based on preference, such as omitting jalapeños for less heat. Ensure the ground beef and chicken are fully cooked before assembling the nachos as the air fryer time is only intended to melt the cheese and warm the toppings.
