Ingredients
- 95 ml Water
- 1.5 g Salt
- 150 g Flour
- 30 g Green onion (Fresh; washed and chopped)
- Baking soda (A pinch)
- 50 g Cheese
- 0.25 cup Flour (For the flour and cornstarch mixture used to prevent sticking)
- 0.25 cup Cornstarch (For the flour and cornstarch mixture used to prevent sticking)
- 20 g Salted butter (Melted; some is brushed onto the dough and the transcript mentions brushing butter during folding)
- Oil (For frying and brushing onto the pancakes)
Steps
- 1
Combine the water and salt in a bowl and mix well.
- 2
Add the 150 g flour to the salted water and mix well. Knead by hand until a dough forms.
- 3
Cover the dough and let it rest for 10 minutes.
- 4
Divide the dough into 4 pieces and shape each piece as shown in the video. Cover and rest for another 5–10 minutes.
- 5
Wash and chop the green onions. Put them in a bowl and add a pinch of baking soda.
- 6
Mix the ¼ cup flour and ¼ cup cornstarch together in a small bowl. Set out the cheese and green onions.
- 7
Sprinkle some of the flour-cornstarch mixture on the work surface. Take one piece of dough, flatten it by hand, then roll it out with a rolling pin to about 18 cm in diameter.
- 8
Sprinkle flour-cornstarch mixture over the rolled dough. Repeat with the remaining pieces, stacking each sheet on top of the first and dusting between layers so they do not stick.
- 9
Roll the stacked dough thinner, turning it over as you roll, until it is about 28 cm in diameter.
- 10
Gently peel the dough pieces apart.
- 11
Microwave the salted butter for 15 seconds to melt it.
- 12
Brush melted butter over the dough.
- 13
Sprinkle chopped green onions over the buttered dough.
- 14
Sprinkle cheese over the green onions.
- 15
Fold the dough using either of the two folding methods shown in the video. For the first method, brush with butter as demonstrated before completing the fold. For the second, cut and fold the dough as demonstrated.
- 16
Heat oil in a pan over medium heat. Add a folded pancake and brush oil over its top.
- 17
Fry for 2 minutes, turn it over, and fry for another 2 minutes, or until both sides are golden brown. Repeat with the remaining pancakes.
- 18
Serve the pancakes hot; the creator describes them as crispy outside and soft inside.
Notes
The transcript refers to two folding methods but does not provide enough detail to reproduce their exact shapes. The amount of oil for frying and brushing is unspecified.
