A smoky and tender pulled beef sandwich featuring chuck roast smoked then braised in a chipotle-BBQ sauce, served on buttery toasted croissants with crispy onions and cotija cheese.

Ingredients

  • 3 lb Beef Chuck Roast (cut into 2 inch cubes)
  • Yellow Mustard (for coating)
  • 0.125 cup BBQ Seasoning (or 2 tbsp)
  • 0.5 cup Hickory Maple BBQ Sauce
  • 0.25 cup Chipotle Adobo Sauce
  • 0.5 cup Apple Cider
  • 6 Croissants (toasted)
  • Crispy Onions (for topping)
  • Pickled Jalapeños (for topping)
  • Cotija Cheese (crumbled, for topping)
  • Cilantro (fresh, for garnish)
  • 0.25 cup Mayo (to be mixed with chipotle sauce)
  • Chipotle Sauce (to taste, mixed with mayo)

Steps

    Begin by cutting your 3 lbs of beef chuck roast into 2 inch cubes.

    Cover the beef cubes lightly with yellow mustard, then coat thoroughly with the 1/8 cup of BBQ seasoning.

    Place the seasoned beef on a smoker preheated to 250°F (120°C). Smoke until the meat reaches an internal temperature of 165°F (74°C). If no smoker is available, you may optionally oven bake the meat.

    Once the meat reaches 165°F internal, transfer the beef into a Dutch oven.

    Add 1/2 cup Hickory Maple BBQ sauce, 1/4 cup chipotle adobo sauce, and 1/2 cup apple cider to the Dutch oven with the beef.

    Cover the Dutch oven and place it in the oven at 300°F (150°C) for 2 hours.

    Remove the Dutch oven from the oven and allow the meat to cool slightly.

    Drain some of the excess fat from the pot, then shred the beef directly into the remaining sauce.

    To assemble the sandwiches, toast the croissants and spread a mixture of mayo and chipotle sauce on the cut sides.

    Add a generous portion of shredded beef to the bottom croissant, followed by crispy onions, pickled jalapeños, crumbled Cotija cheese, and fresh cilantro.

    Add the top croissant and serve immediately.

Notes

If you do not have a smoker, you can perform the first cooking stage in the oven at 250°F on a wire rack over a sheet pan until the internal temperature reaches 165°F before proceeding to the Dutch oven braise.
