Ingredients

  • 4 Salmon fillets (skin-on or skinless)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tbsp Olive oil (for searing)
  • 2 tbsp Butter (unsalted)
  • 3 clove Garlic (minced)
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth
  • 0.5 cup Parmesan cheese (freshly grated)
  • 0.5 cup Sun-dried tomatoes (chopped, drained from oil)
  • 0.5 tsp Red pepper flakes (adjust to taste)
  • 1 tsp Dried oregano
  • Fresh basil (chopped, for garnish)

Steps

    Pat the salmon fillets dry with paper towels and season both sides generously with salt and black pepper.

    Heat olive oil in a large skillet over medium-high heat. Once the pan is hot, add the salmon fillets (skin-side down if applicable).

    Sear the salmon for 4-5 minutes per side until golden brown and cooked through to your preference. Remove the salmon from the skillet and set aside on a plate.

    In the same skillet, reduce heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

    Pour in the heavy cream and chicken broth. Stir to combine, scraping up any browned bits from the bottom of the pan.

    Add the sun-dried tomatoes, red pepper flakes, and dried oregano. Bring the sauce to a gentle simmer.

    Stir in the grated parmesan cheese and continue to simmer for 2-3 minutes until the sauce has slightly thickened.

    Place the cooked salmon fillets back into the skillet. Spoon the sauce over the fish and let it warm through for 1-2 minutes.
