Ingredients
- 1 rotisserie chicken (meat pulled and roughly chopped)
- 1 head romaine lettuce (washed and dried)
- 0.5 cup parmesan cheese (shredded)
- 0.5 cup bacon bits (cooked and crumbled)
- 0.5 cup Caesar dressing (your favorite brand)
- black pepper (to taste)
- 4 sub rolls (or hoagie buns)
- 2 tbsp butter (softened, for toasting rolls)
Steps
- 1
Slice the sub rolls open and spread the softened butter on the cut sides. Place them on a griddle or in a large skillet over medium heat until golden brown and toasted. Set aside.
- 2
On a large cutting board, pile the romaine lettuce, chopped rotisserie chicken, shredded parmesan cheese, and bacon bits.
- 3
Using a large knife or a bench scraper, begin chopping all the ingredients together on the board until they are well combined and the lettuce is in bite-sized pieces.
- 4
Drizzle the Caesar dressing over the chopped mixture and season with black pepper to taste.
- 5
Continue chopping and tossing the mixture on the board until every ingredient is evenly coated with the dressing.
- 6
Scoop a generous portion of the chopped chicken Caesar salad into each toasted sub roll and serve immediately.
Notes
For the best results, use a high-quality creamy Caesar dressing. If you are taking these to a pool or beach, keep the chopped salad mixture in a sealed container in the cooler and assemble the sandwiches just before eating to prevent the bread from getting soggy.
