Oklahoma Smash Burger with Burger Sauce and Onions
A double Oklahoma-style smash burger made with thin beef patties, finely sliced onions, American cheese, pickles, and a sweet, tangy burger sauce. The onions are smashed into the patties so they become charred, steamed, and slightly caramelized.

Ingredients
- 0.75 cup mayonnaise (For the burger sauce)
- 0.333 cup yellow mustard (For the burger sauce)
- 0.333 cup ketchup (For the burger sauce)
- 1.5 tbsp chives (Thinly sliced; the source says one to two tablespoons)
- 1 tsp granulated sugar (For the burger sauce)
- 1 tbsp Worcestershire sauce (For the burger sauce)
- MSG (A little pinch, for the burger sauce)
- 2 cloves garlic (Grated)
- salt (To taste, for the sauce and patties)
- black pepper (To taste, for the sauce and patties)
- 1 yellow onion (Thinly sliced, preferably with a mandoline; discard the first outer layer if desired)
- 4 oz ground beef (Form into two 2-ounce balls; the source contrasts the meat with pork and describes two patties)
- 2 slices American cheese (One slice for each patty)
- 2 hamburger buns (One bottom bun and one top bun; the source does not specify a bun style)
- 8 pickles (The pickles were prepared ahead of time; place eight on the bottom bun)
Steps
- 1
Prepare the burger sauce by combining the mayonnaise, yellow mustard, ketchup, thinly sliced chives, granulated sugar, Worcestershire sauce, a pinch of MSG, and grated garlic. Season with salt and black pepper to taste.
- 2
Whisk the sauce thoroughly until completely combined, then set it aside.
- 3
Prepare the onion by removing the outermost layer if desired, then slice the yellow onion very thinly. A mandoline is recommended.
- 4
Divide the ground beef into two 2-ounce balls.
- 5
Place both beef balls on the cooking surface and add a generous mound of thinly sliced onions over them.
- 6
Smash each beef ball firmly into a thin patty, pressing the onions into the meat. Season both patties with salt and black pepper to taste.
- 7
Scrape underneath the patties and flip them.
- 8
Place one slice of American cheese on each patty and sear for 30 more seconds.
- 9
Stack one cheesy patty on top of the other.
- 10
To assemble, place the bottom bun on a serving surface and spread it with the burger sauce.
- 11
Add eight pickles to the sauced bottom bun.
- 12
Place the stacked double cheesy patty on top of the pickles.
- 13
Spread the remaining sauce over the top bun and place it on the burger.
Notes
The source says the pickles were made ahead of time but does not provide their recipe. It also does not state the cooking-surface temperature or the exact cooking time before flipping; only the 30-second sear after adding cheese is specified. Getting the onions right is described as the trickiest part: they should develop char, steam, and slight caramelization.
