Deconstructed Wonton Soup

Ingredients
- 7 cup Chicken stock (6-8 cups)
- 1 tbsp Soy sauce (for the soup)
- 3 Green onions (whites for soup, greens saved for garnish)
- 2.5 Garlic (2-3 cloves, smashed)
- 0.5 tsp Ginger (minced, or 1-2 slices)
- 2.5 Baby bok choy (2-3 heads)
- Wonton wrappers (however much you like)
- 90 g Shrimp (minced)
- 125 g Ground pork
- 2 Green onions (finely chopped (about 40g) for filling)
- Salt & pepper (to taste)
- Chicken bouillon (pinch)
- 0.25 cup Water (for filling)
- 2 tbsp Soy sauce (for filling)
- 1 tbsp Oyster sauce
- 0.25 tsp Ginger (minced, for filling)
- 1 tbsp Water (for chili sauce)
- 1 tbsp Soy sauce (for chili sauce)
- 2 tbsp Chili oil
- Oil (a little for sautéing)

In a bowl, combine the minced shrimp, ground pork, 2 finely chopped green onions, salt, pepper, a pinch of chicken bouillon, 1/4 cup water, 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1/4 teaspoon minced ginger. Mix everything together until the filling becomes sticky and well-emulsified.

In a small separate bowl, whisk together 1 tablespoon water, 1 tablespoon soy sauce, and 2 tablespoons chili oil to create the chili sauce. Set aside.

Heat a little oil in a large pot over medium heat. Sauté the green onion whites, smashed garlic cloves, and 1/2 teaspoon ginger until fragrant.

Add the chicken stock to the pot and bring the mixture to a simmer.

Stir in 1 tablespoon of soy sauce and season the broth with salt and pepper to taste.

Allow the broth to simmer for 10–15 minutes to develop flavor, then use a slotted spoon to remove and discard the garlic, ginger slices, and green onion whites.

Gently add the wonton filling to the simmering broth (you can drop it in small spoonfuls or clumps) and simmer for 3–4 minutes, or until the meat is cooked through.

Add the baby bok choy and the wonton wrappers to the pot.

Cook briefly until the bok choy is wilted and the wrappers are tender (wonton wrappers cook very quickly, so do not overcook).

Serve the soup hot, drizzled with the prepared chili sauce and garnished with the reserved sliced green onion tops.
Notes
Tip: Wonton wrappers cook very quickly, so add them right at the end to prevent them from becoming too soft.
