Ingredients

  • 1 tbsp Butter (for filling)
  • 1 Apple (large, peeled and cut into small pieces (Honeycrisp recommended))
  • 2 tbsp Brown sugar
  • 1 tsp Spices (Cinnamon, cardamom, ginger, and nutmeg; adjust to preference)
  • Lemon juice (splash)
  • Salt (pinch)
  • Vanilla extract (splash for filling)
  • 1 tbsp Water (plus more to cover apples while simmering)
  • 1 tbsp Cornstarch (to be dissolved in 1 tbsp water)
  • Rum (optional splash)
  • 5 slices White bread (crusts removed)
  • 2 Eggs
  • 0.25 cup Milk
  • 1 tsp Vanilla extract (for French toast mixture)
  • Sugar and cinnamon (for French toast custard, if desired)
  • Cinnamon sugar (for topping)

Steps

  1. 1

Melt 1 tablespoon of butter in a pot over medium heat.

  2. 2

Add the prepared apple pieces, spices (cinnamon, cardamom, ginger, nutmeg), brown sugar, rum (if using), and a splash of water to the pot.

  3. 3

Cook until the apples are soft. Add a little more water to cover the apples if needed, then let simmer on low heat for at least 20 minutes. For maximum flavor, simmer on low for up to an hour.

  4. 4

In a separate small bowl, combine 1 tablespoon of cornstarch with 1 tablespoon of water and mix until fully dissolved to create a slurry.

  5. 5

Add the cornstarch slurry to the apple mixture and stir until the mixture thickens significantly.

  6. 6

Transfer the apple filling to a bowl, stir in a splash of vanilla extract, and let it cool.

  7. 7

In a shallow dish, whisk together the eggs, milk, 1 teaspoon of vanilla extract, and a bit of cinnamon and sugar to create the French toast custard.

  8. 8

Using a rolling pin, roll out each slice of crustless bread until it is flat.

  9. 9

Place a portion of the cooled apple filling at one end of a bread slice and carefully roll it up tightly, pinching the edges if necessary to secure.

  10. 10

Dip each roll into the egg mixture until coated.

  11. 11

Place the rolls seam-side down in a preheated skillet over low-medium heat.

  12. 12

Cook on all sides until golden brown and crispy.

  13. 13

While the rolls are cooking, prepare a bowl with cinnamon sugar.

  14. 14

Immediately after removing the rolls from the skillet, roll them in the cinnamon sugar mixture to coat.

  15. 15

Serve warm, optionally with caramel sauce for dipping.

Notes

The author suggests simmering the apples for up to an hour for the most flavor. Do not add cornstarch directly to the hot fruit; always dissolve in water first. Serve with caramel for dipping.
