Spicy Cheesy Ramen with Bulgogi Beef

Ingredients
- 240 g thinly shaved ribeye (approx. 1/2 lb)
- 0.25 cup soy sauce (for marinade)
- 2 tbsp brown sugar (for marinade)
- 4 garlic (cloves, for marinade)
- 1 tbsp mirin (for marinade)
- 0.5 tsp garlic powder (for marinade)
- 0.5 tsp ginger (for marinade)
- 0.5 tsp black pepper (for marinade)
- 2 pack Otoki Cheesy Ramen (Spicy Chili & Cheddar) (include sauce and powder packets)
- 3 tbsp noodle cooking water (reserved from boiling)
- 4 tbsp mayonnaise
- 2 tbsp peanut butter
- 2 tbsp minced garlic
- 2 egg yolks
- 2 large eggs (for ramen eggs)
- 2 tbsp chili oil
- green onions (sliced, for topping)
- sesame seeds (for topping)

In a bowl, combine the soy sauce, brown sugar, 4 cloves of garlic, mirin, garlic powder, ginger, and black pepper to create the bulgogi marinade.

Add the thinly shaved ribeye to the marinade and let it sit for at least 30 minutes.

Heat a pan over high heat and sear the marinated beef until it is caramelized and cooked through. Set aside.

Prepare the ramen eggs: Bring a pot of water to a full boil. Gently add cold eggs from the fridge and boil for exactly 6½ minutes. Transfer immediately to an ice bath, then peel and set aside.

Cook the ramen noodles in boiling water according to the package instructions.

Reserve 3 tablespoons of the noodle cooking water, then drain the noodles.

In a large mixing bowl, build the sauce by combining the ramen sauce packets, ramen powder packets, mayonnaise, peanut butter, 2 tablespoons of minced garlic, and 2 egg yolks.

Add the hot drained noodles and the 3 tablespoons of reserved cooking water directly into the sauce bowl.

Toss the noodles thoroughly until they are completely coated in the creamy sauce.

Assemble the dish by topping the ramen with the seared bulgogi ribeye, halved ramen eggs, a drizzle of chili oil, sliced green onions, and sesame seeds.
Notes
For the best texture, ensure the ribeye is sliced very thinly. The 6.5-minute boil for the eggs ensures a jammy yolk which complements the creamy sauce.
