Ingredients
- 1 lb Jumbo lump crab meat (one can, drained)
- 1 Egg (large)
- 1 tsp Red pepper hot sauce (Captain Deemo's or similar)
- Spicy Dan-O's Seasoning (Red top; used in the mix, as a topping, and in the sauce)
- 0.5 cup Plain breadcrumbs (added in two stages for texture)
- Avocado oil spray (for the air fryer basket)
- 0.5 cup Mayonnaise (Duke's brand recommended)
- 1 tbsp White wine vinegar (for the sauce)

Place the jumbo lump crab meat into a large mixing bowl.

Add one egg and a splash of red pepper hot sauce to the crab.

Season the mixture generously with Spicy Dan-O's Seasoning (about 6-8 shakes).

Add approximately 1/3 to 1/2 cup of plain breadcrumbs to the bowl.

Gently mix the ingredients by hand, being careful not to break up the large crab lumps. Add a bit more breadcrumbs if the mixture needs more binding.

Form the mixture into thick patties (crab cakes).

Dust the top of each crab cake with another layer of Spicy Dan-O's Seasoning.

Spray the air fryer basket with avocado oil and carefully place the crab cakes inside.

Apply a final dusting of Dan-O's Seasoning over the cakes in the basket.

Air fry at 400°F (200°C) for 10 minutes until the crust is golden and crispy.

While the cakes are cooking, prepare the Thunder Sauce by combining two big scoops of mayonnaise, a splash of white wine vinegar, and several shakes of Dan-O's Seasoning in a small bowl.

Whisk the sauce until smooth and all lumps are removed.

Serve the hot crab cakes with the Thunder Sauce on the side for dipping.
Notes
The key to this recipe is keeping the crab lumps intact by folding the ingredients gently. If you don't have Captain Deemo's hot sauce, any vinegar-based red pepper sauce will work.
