Everyday French Toast

- 1 tbsp vanilla extract
- 2 tsp brown sugar (packed)
- 0.5 tsp ground cinnamon
- 0.25 tsp table salt
- 2 tbsp unsalted butter (melted)
- 1 cup milk
- 8 slices hearty white sandwich bread (presliced supermarket bread, 3/4 inch thick)

Adjust one oven rack to the lowest position and a second rack 5 to 6 inches from the broiler element.

Heat oven to 425°F (218°C).

Generously spray the bottom and sides of an 18 by 13-inch rimmed baking sheet with vegetable oil spray.

In a large bowl, whisk the eggs, vanilla, brown sugar, cinnamon, and salt until the sugar is dissolved and no streaks of egg remain.

Whisking constantly, slowly drizzle in the melted butter.

Whisk in the milk until combined.

Pour the egg mixture into the prepared baking sheet.

Arrange the bread slices in a single layer in the egg mixture, leaving small gaps between slices.

Working quickly, use your fingers to flip the slices in the same order you placed them in the sheet.

Let the bread sit until the slices absorb the remaining custard, about 1 minute.

Bake on the lower rack until the bottoms of the slices are golden brown, 10 to 15 minutes.

Transfer the sheet to the upper rack and heat the broiler, leaving the sheet in the oven while the broiler heats.

Broil until the tops of the slices are golden brown, watching carefully and rotating the sheet if necessary to prevent burning, 1 to 4 minutes.

Using a thin metal spatula, carefully flip each slice and serve.
Notes
Use vegetable oil spray specifically (rather than just oil) because it contains lecithin, which prevents the toast from sticking. This recipe is optimized for standard 4x6 inch presliced supermarket bread that is 3/4 inch thick. Serve with maple syrup or confectioners' sugar if desired.
