Ingredients

  • 0.5 cup nutritional yeast
  • 3 tbsp onion powder
  • 2 tbsp garlic powder
  • 2 tbsp dried parsley
  • 1 tbsp celery seed (or 2 tbsp celery powder)
  • 2 tsp fine sea salt
  • 2 tsp ground white pepper
  • 2 tsp turmeric
  • 1 tsp smoked paprika
  • 0.5 tsp ground thyme
  • 0.5 tsp rubbed sage
  • 0.25 tsp ground rosemary
  • 1 cup white rice (per batch)
  • 2 cup water or broth (per batch)
  • 1 tbsp butter (per batch)

Steps

  1. 1

In a medium bowl or jar, combine the nutritional yeast, onion powder, garlic powder, parsley, celery seed, sea salt, white pepper, turmeric, smoked paprika, ground thyme, rubbed sage, and ground rosemary.

  2. 2

Whisk or shake the ingredients together until thoroughly combined. This makes approximately 18 tablespoons of seasoning base.

  3. 3

Store the seasoning in an airtight container in a cool, dry place. Alternatively, you can pre-measure 1 tablespoon of the seasoning into jars with 1 cup of rice for a 'grab-and-go' meal prep option.

  4. 4

To cook a single batch, combine 1 cup of rice, 1 tablespoon of the prepared seasoning, 2 cups of water or broth, and 1 tablespoon of butter in a saucepan.

  5. 5

Bring the mixture to a boil, then reduce heat to low, cover, and simmer according to the standard cooking instructions for your specific type of rice (typically 15-20 minutes for white rice).

  6. 6

Once the liquid is absorbed and the rice is tender, fluff with a fork and serve.

Notes

If you prefer to wash your rice before cooking, keep the seasoning and rice in separate containers until you are ready to cook. The seasoning mix provides a savory 'chicken' flavor without using actual meat products, making it suitable for vegetarians.
