Ingredients

  • 3 overripe bananas (mashed)
  • 1 tsp vanilla extract
  • 1 egg
  • 0.75 cup brown sugar (for the bread)
  • 1 stick butter (8 tbsp; browned)
  • 2 cup all purpose flour (for the bread)
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 0.66 cup chocolate chips
  • 0.5 cup brown sugar (for the crumble)
  • 4 tbsp butter (melted; for the crumble)
  • 0.5 tsp cinnamon (for the crumble)
  • 4 tbsp all purpose flour (add up to 6 tbsp until crumble consistency is reached)

Steps

  1. 1

Preheat your oven to 350°F (175°C). Grease a standard loaf pan.

  2. 2

Brown 1 stick (8 tbsp) of butter in a small saucepan over medium heat, stirring constantly until it smells nutty and brown bits form at the bottom. Remove from heat and let cool slightly.

  3. 3

In a large bowl, mash the 3 overripe bananas until smooth.

  4. 4

Add the vanilla extract, egg, 3/4 cup brown sugar, and the browned butter to the mashed bananas. Mix until well combined.

  5. 5

Stir in the 2 cups of all-purpose flour, baking soda, and salt until just combined. Do not overmix.

  6. 6

Fold in the 2/3 cup of chocolate chips.

  7. 7

Pour the batter into the prepared loaf pan.

  8. 8

Prepare the crumble by mixing 1/2 cup brown sugar, 4 tbsp melted butter, and 1/2 tsp cinnamon in a small bowl.

  9. 9

Slowly add 4-6 tbsp of all-purpose flour to the crumble mixture, stirring until you achieve a crumbly consistency.

  10. 10

Sprinkle the crumble mixture evenly over the top of the banana bread batter.

  11. 11

    Bake for 30 minutes uncovered.

  12. 12

Loosely cover the pan with tinfoil to prevent the top from burning and bake for an additional 20 minutes, or until a toothpick inserted into the center comes out clean.

  13. 13

Let the bread cool in the pan for at least 10-15 minutes before transferring to a wire rack.

Notes

The author suggests adding a drizzle of banana syrup and flaky sea salt on top for extra flavor. To make the crumble, add the flour slowly until the desired texture is reached.
