Ingredients

  • 3 cucumbers (Finely chopped; approximately 600 g edible flesh.)
  • 250 g sugar
  • 250 ml white vinegar
  • 250 ml water
  • 1 tsp ground turmeric
  • salt (A pinch, to taste.)

Steps

    Wash the cucumbers and chop them finely. If they have a lot of seeds, remove some of them to make a less watery relish.

    Place the white vinegar, water, sugar, turmeric, and a pinch of salt in a medium saucepan. Stir to combine.

    Heat the mixture over medium heat, stirring, until the sugar dissolves and the liquid begins to simmer gently.

    Add the chopped cucumber to the saucepan and bring the mixture back to a gentle simmer.

    Cook over medium-low heat for approximately 15 minutes, stirring occasionally, until the cucumber is tender and the liquid has reduced slightly. Do not let it dry out completely; it should remain moist and glossy.

    Let the relish cool and transfer it to a clean jar with a lid. Refrigerate it before serving so the flavors can meld.
