Soft, fluffy homemade marshmallows naturally sweetened with honey and colored with blue spirulina. These are a gut-healthy alternative to store-bought treats, using grass-fed beef gelatin.

Ingredients

  • 0.5 cup water (for blooming gelatin)
  • 3 tbsp unflavored grass-fed beef gelatin
  • 0.5 cup water (for honey mixture)
  • 0.75 cup honey
  • 0.25 tsp sea salt
  • 1 tsp vanilla extract
  • 1 tsp blue spirulina powder (can use up to 2 tsp for deeper color)
  • 1 tsp warm water (to dissolve spirulina; use up to 2 tsp if needed)
  • rice flour (for dusting the pan)

Steps

    Pour 1/2 cup of water into the bowl of a stand mixer.

    Sprinkle the 3 tablespoons of beef gelatin over the water and let it bloom for 5 to 10 minutes.

    In a saucepan, combine the remaining 1/2 cup water, 3/4 cup honey, and 1/4 teaspoon sea salt.

    Heat the mixture over medium heat, stirring until dissolved. The mixture should be steaming but not boiling.

    Remove the saucepan from the heat and stir in the vanilla extract.

    In a separate small bowl, mix the blue spirulina powder with 1-2 teaspoons of warm water until smooth.

    Turn the stand mixer on and slowly pour the warm honey mixture into the bloomed gelatin.

    Whip the mixture on high speed for 8 to 10 minutes until it becomes thick, fluffy, and glossy.

    Add the dissolved spirulina to the mixer and continue whipping just until the color is fully incorporated.

    Prepare an 8x8 inch pan by lining it with parchment paper and dusting the surface with rice flour and a little extra spirulina powder.

    Transfer the marshmallow fluff into the prepared pan, smoothing the top.

    Refrigerate the marshmallows until set, which should take about 2 to 4 hours.

Notes

The author notes that these marshmallows have a texture similar to a memory foam mattress topper—very soft and squishy. For dusting, rice flour is used to prevent sticking without the refined sugar found in traditional powdered sugar coatings.
