Ingredients
- 1 bag tortellini (Any type; cook according to package directions)
- 2 packs andouille sausage (Sliced)
- 1 onion (Small, finely chopped; yellow onion or shallot may be used)
- 2 cloves garlic (Minced)
- 9 cherry tomatoes (Halved; source gives a range of 8–10)
- 2 tbsp sun-dried tomatoes (Chopped)
- 1 tbsp tomato paste
- 1 tsp oregano
- 1 tsp basil
- 1 tsp parsley
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- salt (To taste)
- black pepper (To taste)
- 1 cup heavy cream
- 0.5 cup Parmesan cheese (Shredded; plus additional Parmesan for garnish if desired)
- 1 cup spinach (Roughly chopped)
- red chili flakes (For garnish, if desired)
- oil (Add a little if needed to cook the onion; sausage oil may be sufficient)
Steps
- 1
Bring a pot of water to a boil. Cook the tortellini according to the package directions, then drain and set aside.
- 2
In a skillet over medium heat, cook the sliced andouille sausage until browned and heated through. Remove it from the skillet and set aside, leaving the rendered oil in the pan.
- 3
Check whether there is enough sausage oil to cook the onion. If needed, add a little oil. Add the finely chopped onion and cook until softened, about 3–4 minutes.
- 4
Add the minced garlic and cook for 30 seconds.
- 5
Add the halved cherry tomatoes, chopped sun-dried tomatoes, and tomato paste. Stir together and cook for 2–3 minutes.
- 6
Add the oregano, basil, parsley, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir to season the tomato mixture.
- 7
Pour in the heavy cream and stir to combine. Bring the sauce to a gentle simmer.
- 8
Add the shredded Parmesan and stir until it melts and the sauce turns creamy.
- 9
Add the chopped spinach and stir until wilted.
- 10
Return the cooked tortellini and browned sausage to the skillet. Toss until everything is completely coated in the sauce.
- 11
Cook for another 1–2 minutes.
- 12
If desired, garnish with red chili flakes and additional Parmesan cheese before serving.
