Ingredients

  • 300 g Beef strips (Thinly sliced steak)
  • 1 tsp Garlic puree (For the beef marinade)
  • 1 tsp Soy sauce (For the beef marinade)
  • 0.5 cup Cornflour (For coating the beef)
  • 0.25 cup Vegetable oil (For frying)
  • 4 tbsp Ketchup (For the sauce)
  • 3 tbsp Sweet chilli sauce (For the sauce)
  • 1.5 tbsp Honey (For the sauce)
  • 1 tbsp Rice wine vinegar (For the sauce)
  • 1 tbsp Dark soy sauce (For the sauce)
  • 1 tsp Garlic puree (For the sauce)
  • 1 tsp Ginger puree (For the sauce)
  • 1 cup Mixed vegetables (Such as peppers and onions, sliced)
  • Sesame seeds (For garnish)
  • Green onion (Sliced, for garnish)

Steps

    Toss the beef strips with 1 tsp garlic puree and 1 tsp soy sauce. Coat thoroughly in cornflour until every piece is well-covered and dry to the touch.

    Heat a generous amount of oil in a pan or wok. Fry the coated beef strips in batches until they are golden brown and very crispy. Remove the beef and set aside to drain on a paper towel.

    In a small bowl, whisk together the sauce ingredients: 4 tbsp ketchup, 3 tbsp sweet chilli sauce, 1.5 tbsp honey, 1 tbsp rice wine vinegar, 1 tbsp dark soy, 1 tsp garlic puree, and 1 tsp ginger puree.

    In the same pan (drain excess oil if necessary), sauté your chopped vegetables and additional garlic until they are fragrant and beginning to soften.

    Pour the prepared sauce into the pan with the vegetables. Bring to a simmer and let it reduce slightly until it thickens into a glossy glaze.

    Add the crispy beef back into the pan. Toss quickly and thoroughly to ensure all the beef is coated in the sauce without losing its crunch.

    Garnish with sesame seeds and sliced green onions. Serve immediately, ideally over steamed rice.

Notes

The author suggests adding fresh chillies during the vegetable frying stage for an extra kick. Ensure the oil is hot enough before adding the beef to achieve the 'crags' and maximum crispiness.
