Ingredients
- 840 g Bread flour
- 250 g Mashed cooked sweet potato (Blended is also fine.)
- 300 g Warm milk (Use 1¼ cups first; the source gives a range of 300–330 g (1¼–1⅓ cups) and says sweet potato moisture varies. Add more only if dough feels too stiff.)
- 105 g Honey (Source measurement is ¼ cup plus 1½ Tbsp; total equivalent is 5½ Tbsp.)
- 18 g Instant yeast
- 2 Large eggs, for dough
- 56 g Melted butter (For the dough.)
- 15 g Salt
- 1 Egg, for egg wash (Brush over loaves after the second rise.)
- Milk, for egg wash (A splash, for the egg wash.)
- Butter, for brushing (Melted; brush over the tops while warm. Amount not specified.)
- Butter or oil, for greasing loaf pans (Amount not specified; source says to use greased loaf pans.)
Steps
- 1
Combine the instant yeast, warm milk, and honey. Leave the mixture to bloom for 5–10 minutes.
- 2
Mix the yeast mixture with the two eggs, melted butter, and mashed cooked sweet potato.
- 3
Combine the bread flour and salt in a mixing bowl. Add the wet mixture to the flour and salt, and mix until a dough forms.
- 4
Knead the dough for 8–10 minutes, until smooth and elastic.
- 5
Cover the dough and let it rise for 60–90 minutes, until doubled in size.
- 6
Divide the dough into two equal pieces and shape each into a loaf. Place the loaves in greased loaf pans.
- 7
Let the loaves rise in the pans for 45 minutes.
- 8
Beat the remaining egg with a splash of milk to make an egg wash.
- 9
After the second rise, brush the tops of the loaves with the egg wash.
- 10
Bake in glass pans at 325°F for 40–50 minutes, or in metal pans at 350°F for 35–45 minutes.
- 11
When the bread is done, brush the tops with melted butter while the loaves are still warm.
Notes
Begin with 1¼ cups milk. Sweet potatoes vary in moisture; the source advises adding more water only if the dough feels too stiff, though its ingredient list specifies milk. Grease for the pans and the amount of butter for brushing are not quantified.
