Ingredients
- 190 g Plain flour
- 65 g Caster sugar
- 1 tbsp Baking powder
- 0.5 tsp Salt
- Nutmeg (Pinch)
- 1.5 tsp Ground cinnamon
- 80 ml Whole milk (For the fritter batter)
- 2 Large eggs
- 3 tbsp Greek yoghurt or natural yoghurt (Either Greek yoghurt or natural yoghurt)
- 2 Apples (Peeled and diced)
- Vegetable or rapeseed oil (For frying; about 5 cm deep in the pan)
- 300 g Icing sugar (For the vanilla glaze)
- 80 ml Whole milk (For the vanilla glaze)
- 1 tsp Vanilla extract
Steps
- 1
In a bowl, mix the plain flour, caster sugar, baking powder, salt, nutmeg, and ground cinnamon until evenly combined.
- 2
In a separate bowl, whisk together the whole milk, eggs, and yoghurt.
- 3
Add the milk mixture to the dry ingredients and stir just until combined; avoid overmixing.
- 4
Fold the peeled, diced apples into the batter, mixing only enough to distribute them.
- 5
Pour vegetable or rapeseed oil into a deep pan to a depth of about 5 cm. Heat it to 175°C.
- 6
Drop heaped tablespoons of batter into the hot oil, working in batches so the pan is not crowded.
- 7
Fry each batch for about 2–3 minutes per side, until golden brown and cooked through.
- 8
Lift the fritters from the oil and drain them on kitchen paper. Allow them to cool slightly.
- 9
Whisk the icing sugar, whole milk, and vanilla extract together until the glaze is smooth.
- 10
Drizzle the glaze over the cooled fritters or dip them into it. Leave for a few minutes to set, then serve.
