Chinese Beer Braised Pork Ribs

Ingredients
- 2 lb pork ribs (cut into individual ribs)
- 2 tbsp cooking oil
- 1 inch ginger (sliced into coins)
- 4 garlic (cloves, smashed)
- 12 oz beer (one standard bottle or can of lager)
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce (for color)
- 1 tbsp rock sugar (or granulated sugar)
- 2 star anise
- 2 green onions (chopped for garnish)

Blanch the pork ribs in boiling water for 3-5 minutes to remove impurities. Drain and pat the ribs dry with paper towels.

Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat. Add the pork ribs and sear until they are browned on all sides.

Add the sliced ginger and smashed garlic cloves to the pan. Stir-fry for 1 minute until fragrant.

Pour in the bottle of beer, light soy sauce, and dark soy sauce. Add the rock sugar and star anise.

Bring the liquid to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the ribs are tender.

Remove the lid and increase the heat to medium-high. Stir constantly to reduce the sauce until it thickens into a glossy glaze that coats the ribs.

Garnish with chopped green onions and serve hot.
Notes
Using a lager or pilsner works best for this recipe; avoid overly bitter IPAs. If the liquid reduces too quickly before the ribs are tender, add a splash of water.
