Ingredients

  • 1.75 lb steak (sirloin, ribeye, or flank; thinly sliced)
  • salt (to taste)
  • black pepper (to taste)
  • garlic & herb seasoning (such as Mrs. Dash; to taste)
  • 2 tbsp oil (for searing)
  • 1 small onion (diced)
  • 3.5 garlic cloves (minced)
  • 1.5 cup mushrooms (sliced)
  • 2 tbsp butter
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 1 tsp Creole seasoning
  • 1 tsp garlic & herb seasoning (Mrs. Dash)
  • 0.33 cup all-purpose flour
  • 2 cup beef broth (add more if needed for consistency)
  • 1 tbsp Dijon mustard
  • 2 tbsp sour cream
  • 2.5 sprigs fresh thyme (or 1/2 tsp dried)
  • 12 oz broad egg noodles (cooked)
  • fresh parsley (chopped; for garnish)

Steps

    Cut the steak into thin strips.

    Season the steak strips with salt, black pepper, and garlic & herb seasoning, pressing the seasoning into the meat.

    Heat 2 tablespoons of oil in a skillet over medium-high heat.

    Add the steak strips to the skillet and cook for 3 minutes on each side. Work in batches to avoid overcrowding the pan. Once cooked, remove the steak from the pan and set aside.

    In the same skillet, add the diced onion, minced garlic, sliced mushrooms, and 2 tablespoons of butter.

    Cook the vegetables together until they are tender.

    Season the vegetable mixture with onion powder, garlic powder, smoked paprika, Creole seasoning, and additional garlic & herb seasoning.

    Add 1/3 cup of all-purpose flour to the pan and mix well to coat the vegetables.

    Deglaze the pan by pouring in the beef broth, scraping up any browned bits from the bottom.

    Stir in the Dijon mustard, sour cream, and fresh thyme sprigs.

    Allow the sauce to come to a slow boil and simmer for 5 to 10 minutes until thickened.

    Add the cooked broad egg noodles and the seared steak strips back into the skillet.

    Let the mixture come to a simmer together so the flavors meld.

    Garnish with chopped fresh parsley and serve.

Notes

Work in batches when searing the steak to ensure it browns properly rather than steaming. You can adjust the consistency of the sauce by adding more beef broth if it becomes too thick.
