High Protein Cookie Dough Bites

Ingredients
- 0.5 cup cottage cheese (blended for filling)
- 0.25 cup natural peanut butter
- 2 tbsp honey (or maple syrup)
- 1 tsp vanilla extract
- 1 cup almond flour (ground almonds)
- 0.5 cup refined sugar-free chocolate chips (for the dough; such as Enjoy Life or Hu)
- 1 cup chocolate chips (for coating; or more as needed)
- 1 tsp coconut oil (for melting with chocolate chips)

Place the cottage cheese, natural peanut butter, honey (or maple syrup), and vanilla extract into a blender or food processor.

Blend the filling ingredients until the mixture is completely smooth.

Transfer the mixture to a bowl and stir in the almond flour until well combined.

Fold in the 1/2 cup of refined sugar-free chocolate chips.

Roll the dough into small balls and place them on a tray.

Freeze the balls for 20–30 minutes, or until they are firm.

In a microwave-safe bowl or using a double boiler, melt the 1 cup of chocolate chips and 1 teaspoon of coconut oil together until smooth.

Dip each chilled ball into the melted chocolate to coat, then place them back onto a parchment-lined tray.

Refrigerate or freeze the bites until the chocolate coating is set.

Notes
These are refined sugar-free if using brands like Enjoy Life or Hu for the chocolate chips. They keep well in both the refrigerator and the freezer.
