Weights are estimates. Together, the ingredients weigh about 1.15 kg before cooking, which is about 285 g per serving.

Steps

  1. Make the peanut sauce. Place the peanut butter, water, soy sauce, rice vinegar, maple syrup, and finely grated garlic in a large bowl large enough to hold the entire salad.

  2. Whisk the sauce ingredients until smooth. Taste and season with a little salt if needed and lots of black pepper.

  3. Place the dried ramen noodle slab in a medium bowl and roughly crumble it into irregular, bite-sized chunks.

  4. Open the ramen flavor packet, measure out ¾ teaspoon of the powder, and sprinkle it over the crushed noodles. Toss to coat.

  5. Add the sliced Napa cabbage, torn mixed herbs, and half of the chopped roasted peanuts to the large bowl containing the peanut sauce. Season with salt and pepper, then toss to combine.

  6. Arrange half of the cabbage mixture in a wide, shallow bowl or serving platter.

  7. Top with a handful of the crushed ramen noodles, then add the remaining cabbage mixture and the rest of the crushed noodles.

  8. Finish by topping the slaw with the remaining chopped peanuts and scattering the sliced scallions over the top. Serve promptly to preserve the noodle crunch.

Notes

The formula is adaptable: Savoy or green cabbage can replace Napa cabbage, and another nut or seed paste can replace the peanut butter. Layer the salad just before serving so the ramen noodles stay as crisp as possible.
