Ingredients

  • 6 large hard-boiled eggs (approx. 300 g peeled)
  • 100 g peanut butter (100% natural)
  • 45 g unsweetened cocoa powder (sugar-free)
  • 30 ml skim or plant-based milk (sugar-free; add gradually until desired texture is achieved (up to 40 ml))
  • 1 tsp vanilla extract (optional but highly recommended)
  • 40 liquid stevia (or 40 g organic honey; use 40 to 50 drops)
  • sea salt (a pinch to enhance flavor)
  • shredded coconut or extra cocoa powder (for coating)

Steps

  1. 1

Place the 6 peeled hard-boiled eggs in a food processor.

  2. 2

Add the peanut butter, unsweetened cocoa powder, chosen sweetener (stevia or honey), vanilla extract, and a pinch of sea salt.

  3. 3

Process the mixture until well combined.

  4. 4

Gradually incorporate the milk while continuing to process. It is essential not to overdo the liquid so the dough doesn't become too soft; it should have a highly moldable texture.

  5. 5

Take small portions of the dough and form small balls with your hands.

  6. 6

Roll each truffle in extra cocoa powder or shredded coconut for coating.

Notes

The recipe makes between 10 and 12 truffles. It is an excellent option for those looking for a protein-rich and gluten-free dessert. No one will notice that the main ingredient is hard-boiled egg.
