  • 0.75 cup granulated sugar (divided)
  • 6 egg yolks (large)
  • 0.5 cup unsweetened pistachio paste (use a smooth pistachio paste; adjust sweetness if the paste is sweetened)
  • 0.25 tsp fine sea salt
  • 0.75 cup blackcurrant jam or preserves (smooth jam works best for swirling)
  • 2 tbsp water (to loosen the jam if needed)

    Place the bowl of the ice-cream maker or stand-mixer attachment in the freezer according to the manufacturer's instructions, usually for at least 12–24 hours before churning.
