Ingredients

  • 500 g chicken thigh mince
  • 1 onion (large)
  • 4 garlic (cloves)
  • 1 ginger (thumb size)
  • 1 bunch fresh coriander
  • 3 green chillis
  • 1 tsp red chilli powder
  • 1.5 tsp garam masala
  • 1.5 tsp ground coriander
  • 1.5 tsp ground cumin
  • 1 tsp salt (or to taste)
  • 0.5 tsp black pepper
  • 3 tbsp breadcrumbs

Steps

    Place the onion, garlic, ginger, fresh coriander, and green chillis into a food processor and pulse until finely minced.

    In a large mixing bowl, combine the chicken thigh mince with the minced vegetable mixture, red chilli powder, garam masala, ground coriander, ground cumin, salt, black pepper, and breadcrumbs.

    Mix thoroughly by hand until all ingredients are well incorporated and the mixture is sticky enough to hold its shape.

    Shape the mixture into your preferred style, such as chapli, seekh, kofte, or burger patties.

    Cook the kebabs using your preferred method: shallow fry in a pan, grill, bake in the oven, or air fry until cooked through and golden brown.

Notes

The mixture can be shaped and frozen for later use. This recipe yields approximately 15-16 kebabs depending on the size and shape chosen.
