Loaded Baked Potato Waffles

Ingredients
- 2 cup mashed potatoes (cold, preferably from the day before)
- 1 egg (large, lightly beaten)
- 0.5 cup shredded cheddar cheese
- 0.25 cup cooked and chopped bacon (crispy)
- 2 tbsp fresh chives (finely chopped)
- 0.25 cup all-purpose flour (to help bind the mixture)
- salt and black pepper (to taste)
- cooking spray or butter (for greasing the waffle maker)
- sour cream (for serving)

Preheat your waffle maker according to the manufacturer's instructions until it is very hot.

In a large bowl, combine the cold mashed potatoes with the beaten egg, shredded cheddar, chopped bacon, and chives.

Gradually add the flour and mix until all ingredients are well incorporated and the mixture is manageable.

Season with salt and pepper to taste, keeping in mind that the potatoes and bacon already contain salt.

Generously grease the waffle maker plates with cooking spray or melted butter.

Place a portion of the mixture in the center of the waffle maker and close it. Cook for 5-8 minutes or until the waffle is golden brown and very crispy on the outside.

Carefully remove and serve immediately with a dollop of sour cream and more chives on top.
Notes
This recipe is perfect for using up leftover mashed potatoes. Make sure the mashed potatoes are well chilled so that the waffles hold their shape.
