Ingredients
- 100 g Mascarpone
- 60 g White chocolate
- 150 ml Whole milk
- 100 ml Heavy cream (For the custard)
- 2 Egg yolks
- 0.5 tsp Vanilla extract
- Sea salt (A pinch, for the ice cream base)
- Honey (Optional; a squeeze, to taste)
- 100 g Granulated sugar
- 30 ml Water
- 60 ml Heavy cream (Warmed, for the caramel)
- 30 ml Freshly brewed espresso
- 20 ml Fresh orange juice
- 15 g Unsalted butter
- Sea salt (A pinch, for the caramel)
- Cocoa powder (For dusting)
- Fresh orange zest (For finishing; freshly grated)
Steps
- 1
Heat the whole milk, the 100 ml heavy cream, and vanilla in a saucepan until steaming.
- 2
In a separate bowl, whisk the egg yolks with honey if using. Slowly pour in the warm milk mixture while whisking continuously.
- 3
Return the mixture to the saucepan. Cook gently, stirring constantly, until it reaches 82–84°C.
- 4
Remove the pan from the heat. Stir in the white chocolate until melted, then cool the mixture to 35–40°C.
- 5
Add the mascarpone and the ice-cream-base pinch of sea salt. Blend with a hand blender until silky smooth.
- 6
Refrigerate the base until completely cold. Pour it into a Ninja Creami container and freeze for 24 hours.
- 7
Process the frozen base on the Ice Cream setting. Re-spin if needed.
- 8
In a saucepan, combine the sugar and water. Set over medium heat and let the mixture caramelize without stirring until deep amber.
- 9
Carefully whisk in the warmed 60 ml heavy cream, followed by the espresso and orange juice.
- 10
Simmer for 1–2 minutes, then remove the caramel from the heat. Stir in the butter and caramel pinch of sea salt. Cool until thick but pourable.
- 11
Pipe the ice cream into a chilled coupe. Drizzle generously with the espresso-orange caramel, then finish with a dusting of cocoa powder and freshly grated orange zest.
Notes
The source does not state a serving yield; 4 servings is an estimate. Honey is optional and its amount is described only as a squeeze. Cocoa powder and orange zest are listed without quantities.
