Moist, warmly spiced mini pumpkin cakes made with blended oats, pumpkin purée, maple syrup or honey, and dark chocolate. They are naturally sweetened, tender, and suited to breakfast or an afternoon snack.

Ingredients

  • 1.5 cup Rolled oats (Blended into coarse flour)
  • 1 cup Pumpkin purée
  • 0.5 cup Maple syrup or honey (Use maple syrup or honey)
  • 2 Large eggs (About 100 g total)
  • 3 tbsp Olive oil
  • 1 tsp Vanilla extract
  • 1.5 tsp Pumpkin pie spice
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • Salt (A pinch, about 1 g)
  • 0.5 cup Dark chocolate (Chopped; folded into the batter)
  • 35 g Dark chocolate (Optional extra for topping; source gives 30–40 g)

Steps

    Preheat the oven to 350°F (175°C). Line or grease a mini cheesecake pan or jumbo muffin tin.

    Place the rolled oats in a blender or food processor and pulse for 5–10 seconds, until they are mostly flour-like but still contain some small oat pieces.

    Chop the dark chocolate into small pieces. Reserve the optional extra chocolate separately if using it for topping.

    In a large bowl, add the pumpkin purée, maple syrup or honey, eggs, olive oil, and vanilla extract.

    Whisk the wet ingredients together until evenly combined and smooth.

    In a separate bowl, combine the blended oats, pumpkin pie spice, baking powder, baking soda, and salt.

    Add the dry mixture to the bowl of wet ingredients. Stir until fully combined, taking care not to leave pockets of dry oat flour.

    Fold the chopped dark chocolate into the batter until distributed throughout.

    Scoop the batter evenly into the prepared mini cheesecake pan or jumbo muffin tin. If desired, scatter the optional extra dark chocolate over the tops.

    Bake for 25–30 minutes, depending on the pan size, until the cakes are set and a toothpick inserted into the center comes out clean.

Notes
