  • 1 tbsp chili oil (or chili crisp)

  • 3 baby cucumbers (sliced)
  • 1 medium carrot (julienned)
  • 0.5 red onion (pickled or regular; sliced into half moons)
  • 1 avocado (cubed)
  • 0.25 cup cilantro (minced)
  • 0.25 cup mayo
  • 0.25 cup greek yogurt
  • 0.25 cup sweet chili sauce (plus extra for tossing chicken if desired)
  • 1 tbsp sriracha (skip if spice sensitive)
  • 1 lime juice (juiced)
  • sesame seeds (for topping)

Steps

    Begin by cooking your rice according to package instructions. Once cooked and cooled, spread the rice in an even layer on a parchment-lined baking sheet.

    Add the olive oil, soy sauce, and chili oil (or chili crisp) to the rice. Mix well to ensure the rice is evenly coated.

    Bake the rice at 425°F (220°C) for 30-45 minutes, flipping halfway through, until it reaches your desired level of crispiness.

    Meanwhile, add the chicken tenders to another baking sheet and cook according to package instructions until fully cooked and golden.
