Ingredients
- 1 cup water (divided; use ½ cup warm and ½ cup for the syrup)
- 0.25 cup grass-fed gelatin
- 1 cup honey or maple syrup (choose either honey or maple syrup)
- 1 tbsp marshmallow root powder (optional; source gives a range of 1–2 tbsp; recipe is said to work without it)
- 1 tsp vanilla (optional)
- salt (a pinch)
- coconut oil (for greasing the pan, as an alternative to lining it with parchment paper)
Steps
- 1
Line an 8×8-inch pan with parchment paper, or grease it with coconut oil.
- 2
Add ½ cup warm water, the gelatin, and the optional marshmallow root powder to a stand mixer bowl. Stir to combine.
- 3
In a saucepan, combine the remaining ½ cup water, the honey or maple syrup, and a pinch of salt. Bring to a gentle boil, then whisk for 8 minutes.
- 4
With the mixer on low, slowly pour the hot syrup mixture into the gelatin mixture.
- 5
Add the optional vanilla. Beat on high for 8–15 minutes, until thick and fluffy peaks form.
- 6
Pour the marshmallow mixture into the prepared pan and smooth the top. Let it set for 4 hours or overnight.
- 7
Cut into pieces and enjoy.
Notes
The source lists either honey or maple syrup, plus optional marshmallow root powder and vanilla. It gives no yield and does not specify a cutting size; servings are estimated. Choose parchment or coconut oil for preparing the pan.
