Ingredients

  • 3 tbsp Olive oil (High quality Spanish olive oil preferred)
  • 3 Garlic (Cloves, minced)
  • 0.5 Onion (Small onion, finely diced)
  • 1 tbsp Smoked paprika (Pimentón de la Vera)
  • 1 tsp Spicy paprika (Adjust to heat preference)
  • 1 Dried chili (Whole or crushed for extra kick)
  • 1 tbsp All-purpose flour
  • 1.5 cup Vegetable stock
  • Salt (to taste)

Steps

    In a saucepan over medium-low heat, add the olive oil, minced garlic, and diced onion.

    Sauté the aromatics until they soften down and become translucent, being careful not to burn the garlic.

    Stir in the smoked paprika, spicy paprika, and dried chili. Let the spices cook briefly in the oil to release their fragrance.

    Add the flour to the pan and cook for about 20 seconds, stirring constantly to incorporate it with the oil and spices.

    Gradually pour in the vegetable stock while stirring to prevent lumps from forming.

    Bring the mixture to a gentle simmer and let it cook for about 10 minutes to thicken and develop the flavors.

    Season the sauce with salt to taste.

    Transfer the mixture to a blender or use an immersion blender to process until the sauce is completely smooth.

Notes

This sauce can be stored in the refrigerator for over a week. While traditionally served over fried potatoes (patatas bravas), it also pairs well with eggs, grilled meats, or tacos.
