Ingredients

  • 2 tbsp olive oil
  • 1 inch ginger (knob, cut into thin matchsticks)
  • 4 cup roma tomatoes (about 5 tomatoes, roughly chopped)
  • 0.5 tsp salt
  • 0.5 tsp white pepper
  • 0.5 tsp crushed red chili flakes
  • 1 tsp sesame oil
  • 1.5 tbsp oyster sauce
  • 0.5 cup water (for cornstarch slurry)
  • 2 tsp cornstarch
  • 2 eggs (whisked)
  • 0.33 cup green onions (chopped; reserve some for garnish)
  • steamed white rice (for serving)

Steps

    Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

    Add the ginger matchsticks and cook until fragrant and just starting to brown, about 1 to 2 minutes.

    Add the chopped roma tomatoes, 1/2 teaspoon salt, 1/2 teaspoon white pepper, 1/2 teaspoon crushed red chili flakes, 1 teaspoon sesame oil, and 1 1/2 tablespoons oyster sauce to the skillet.

    Toss to combine and continue to cook until the tomatoes are jammy, stirring occasionally, for 5 to 8 minutes. You can use the back of a wooden spoon to help smash the tomatoes as they break down.

    In a small bowl, whisk together 1/2 cup water and 2 teaspoons cornstarch to create a slurry.

    Pour the slurry into the pan and stir. Allow the tomatoes to continue cooking until the sauce has thickened and the tomatoes have broken down further, about 2 to 3 minutes.

    Reduce the heat to maintain a gentle simmer.

    Drizzle the whisked eggs over the tomatoes in a thin stream. Do not stir immediately; let the eggs gently cook in the tomato gravy until they are just barely set, about 2 minutes.

    Add the chopped green onions, then gently stir to break up the egg into large, silky ribbons. Be careful not to over-stir or the eggs will become too fragmented.

    Serve the tomato egg immediately over warm steamed white rice and garnish with the reserved green onions.

Notes

This recipe is excellent for using winter tomatoes that might lack flavor, as the cooking process and seasonings enhance them. For a different texture, this can also be served over rice noodles or cheung fun (steamed rice rolls).
