Almond Croissant Pancakes

Ingredients
- 1 cup Almond flour (Superfine preferred for smooth texture)
- 0.5 cup Powdered sugar (For the almond paste)
- 1 tbsp Water (Added to almond paste as needed)
- 0.25 tsp Almond extract (Optional)
- 1.5 cup All-purpose flour (For pancake batter)
- 1 tbsp Baking powder
- 2 tbsp Sugar
- 0.5 tsp Salt
- 1.25 cup Milk
- 1 Egg
- 3 tbsp Melted butter
- 0.25 cup Sliced almonds (For topping)
- Glaze (Simple mixture of powdered sugar and milk/water for topping)

In a bowl or food processor, combine the almond flour, powdered sugar, a drop of almond extract, and a small amount of water. Mix until a thick, pliable paste forms.

Divide the almond paste into small portions and pat them into flat discs (about 2 inches in diameter).

Place the almond paste discs in the freezer to chill while you prepare the pancake batter. This makes them easier to handle.

In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt.

In a separate bowl, whisk the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Pour a small dollop of pancake batter onto the pan.

Place one chilled almond paste disc directly onto the center of the wet batter.

Notes
Using superfine almond flour results in a smoother filling if mixing by hand. Chilling the almond paste discs is a crucial step to prevent them from melting too quickly or becoming messy when assembling the pancakes.
