Ingredients

  • 2 Large Eggs
  • 0.25 cup Red Bell Pepper (diced)
  • 0.25 cup Green Bell Pepper (diced)
  • 2 tbsp Red Onion (finely diced)
  • 1 tsp Olive Oil (for sautéing)
  • Salt (to taste)
  • Black Pepper (to taste)
  • 1 Large Flour Tortilla
  • 0.5 Avocado (sliced)
  • 4 Cherry Tomatoes (halved)
  • 0.5 cup Baby Spinach (fresh)

Steps

    In a small bowl, crack the two eggs and whisk them together with a pinch of salt and black pepper until well combined.

    Heat olive oil in a non-stick skillet over medium heat. Add the diced red and green bell peppers and the red onion. Sauté for 2-3 minutes until the vegetables are slightly softened.

    Pour the whisked eggs into the skillet with the vegetables. Scramble the eggs gently with a spatula until they are just cooked through and no longer runny. Remove from heat.

    Lay the flour tortilla flat on a clean surface or plate.

    Layer the fresh baby spinach in the center of the tortilla, followed by the sliced avocado and halved cherry tomatoes.

    Top the vegetables with the warm scrambled egg and pepper mixture.

    Fold the sides of the tortilla inward and roll it up tightly to form a wrap.

    Optional: Place the wrap back into the skillet over medium heat for 1 minute per side to toast the tortilla and seal the edges.

Notes

You can add a sprinkle of shredded cheddar or feta cheese for extra flavor. For a spicy kick, serve with a side of salsa or a drizzle of hot sauce.
