Ingredients
- 0.5 cup Tamari (gluten-free soy sauce)
- 0.5 cup Brown sugar (packed)
- 2 tbsp Mirin (Japanese sweet rice wine)
- 1 tsp Toasted sesame oil
- 1 tsp Rice vinegar
- 1 tbsp Fresh ginger (grated or finely minced)
- 2 Garlic (cloves, minced)
- 1 Green onions (finely chopped)

In a small saucepan, combine the tamari, brown sugar, mirin, toasted sesame oil, and rice vinegar.

Add the grated ginger, minced garlic, and chopped green onions to the saucepan.

Place the saucepan over medium heat and whisk the ingredients together until the sugar has completely dissolved.

Bring the mixture to a gentle simmer. Cook for 5-7 minutes, stirring occasionally, until the sauce has slightly thickened and the flavors have melded.

Remove the pan from the heat and let the sauce cool to room temperature.

Once cooled, transfer the sauce to a glass jar or airtight container. It can be used immediately or stored in the refrigerator.
Notes
This sauce will keep in the refrigerator for up to 2 weeks. It is excellent as a marinade for chicken, beef, or tofu, or used as a finishing glaze for grilled vegetables.
