  • 2 pasilla chiles (boiled)
  • 5 guajillo chiles (boiled)
  • 0.5 white onion (for the marinade)
  • 4 garlic cloves
  • 0.5 cup orange juice
  • 2 tbsp vinegar
  • 2 kg pork (thinly sliced)
  • 0.5 white onion (sliced into half moons)
  • 1 tbsp lard (for cooking)
  • 1 cup pineapple (sliced and roasted)
  • mixed spices (typically includes oregano, cumin, and cloves)

Steps

    Boil 2 pasilla chiles and 5 guajillo chiles in water until softened.

    In a blender, combine the half onion, 4 garlic cloves, spices, 1/2 cup orange juice, 2 tablespoons of vinegar, and the boiled chiles.

    Blend the mixture thoroughly until a smooth marinade forms.

    Place 2 kilograms of sliced pork in a large bowl and add the other half of the onion, sliced.
