Ingredients

  • 6 Rice paper wrappers (dried)
  • 2 cup Watermelon (cut into thin batons or strips)
  • 0.5 cup Feta cheese (crumbled or cut into small strips)
  • 1 handful Fresh mint leaves (whole leaves)
  • 2 tbsp Balsamic glaze (for drizzling or dipping)

Steps

    Prepare the watermelon by cutting it into thin, uniform batons or strips approximately 3-4 inches long.

    Fill a shallow dish or large bowl with warm water.

    Dip one rice paper wrapper into the warm water for about 5-10 seconds until it begins to soften, then lay it flat on a clean cutting board or damp surface.

    Place a few mint leaves in the center of the rice paper.

    Top the mint with a few strips of watermelon and a sprinkle of feta cheese.

    Fold the bottom of the rice paper over the filling, tuck in the sides, and roll tightly to seal the summer roll.

    Repeat the process with the remaining ingredients.

    Serve the rolls immediately with balsamic glaze drizzled over the top or on the side for dipping.

Notes

For the best texture, serve these immediately as rice paper can become rubbery if left in the fridge. You can add cucumber strips for extra crunch.
