Ingredients

  • 500 g Meat (Beef, mutton, or to taste; fresh and minced)
  • 1 Onion (For the minced meat)
  • 1 Red bell pepper (Finely diced or minced)
  • Herbs (Parsley and cilantro, chopped)
  • Salt (To taste)
  • Black pepper (To taste)
  • Paprika (To taste)
  • 7 Potatoes (6-8 pieces, sliced)
  • 1 Onion (Sliced into rings)
  • 2 tbsp Vegetable oil (For roasting)
  • Lavash (Flatbread for serving)
  • Pickled red onion (For serving)
  • Sauce (Your favorite sauce for serving)

Steps

  1. 1

Prepare the meat by mincing 500g of fresh beef or mutton.

  2. 2

Finely chop one onion and the red bell pepper.

  3. 3

In a large bowl, combine the minced meat, chopped onion, chopped red bell pepper, and fresh herbs (parsley and cilantro).

  4. 4

Season the meat mixture with salt, black pepper, and paprika to taste. Mix thoroughly until well combined.

  5. 5

Peel and slice the potatoes into rounds. Slice the second onion into rings.

  6. 6

Arrange the potato slices and onion rings in a baking dish. Drizzle with vegetable oil and season with a bit of salt.

  7. 7

Shape the minced meat mixture into elongated kebab shapes and thread them onto wooden skewers.

  8. 8

Place the meat skewers directly on top of the bed of potatoes and onions in the baking dish.

  9. 9

Preheat your oven to 400°F (200°C).

  10. 10

Roast in the oven for approximately 40-45 minutes, or until the meat is fully cooked and the potatoes are tender and golden.

  11. 11

Serve the skewers and roasted potatoes hot on lavash flatbread, garnished with pickled red onions, fresh herbs, and your favorite sauce.

Notes

Soak wooden skewers in water for 30 minutes before use to prevent them from burning in the oven. You can use a mix of beef and lamb for more flavor.
