Ingredients

  • 8 tbsp salted butter (barely melted)
  • 0.5 cup white sugar (raw cane sugar with a coarser texture recommended)
  • 0.25 cup light brown sugar (packed)
  • 1 tsp vanilla
  • 1 egg
  • 1.5 cup all purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt (author suggests adding a little extra)
  • 0.75 cup chocolate chips (combination of chips and chunks recommended)

    Preheat the oven to 350 degrees F (175 degrees C).

    Microwave the 8 tablespoons of salted butter for about 40 seconds to just barely melt it. It shouldn’t be hot, but it should be almost entirely in liquid form.

    Using a stand mixer or electric beaters, beat the barely melted butter with the 1/2 cup white sugar and 1/4 cup packed light brown sugar until creamy.

    Add the 1 teaspoon of vanilla and the egg; beat on low speed until just incorporated, about 10-15 seconds. Do not overbeat the egg or the cookies will be stiff.

    Add the 1 1/2 cups flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Mix until crumbles form.

    Use your hands to press the crumbles together into a dough. It should form one large ball that is easy to handle, sitting right at the stage between “wet” and “dry” dough.

    Add the 3/4 cup chocolate chips and chunks and incorporate them into the dough using your hands.

    Roll the dough into 12 large balls (or 9 for extra large cookies) and place them on a cookie sheet.

Notes

Do not overbake! This is essential for keeping the cookies soft. They will look pale and puffy when they come out but will firm up as they cool. These stay soft for many days in an airtight container and also freeze well.
