Ingredients
- 8 flour tortillas (can be homemade or store-bought)
- 700 g chicken breast (cut into cubes)
- 1 onion (large (or 2 medium), chopped)
- 1 red bell pepper (chopped)
- 3 cloves garlic (minced)
- oil (for cooking the chicken)
- salt (to taste)
- sweet paprika (to taste)
- pepper (to taste)
- curry powder (to taste)
- 200 g heavy cream
- mozzarella cheese (to taste, shredded or cubed)
- parsley (fresh, chopped)
- 1 tsp flour (for the tortilla glue)
- 3 tbsp water (for the tortilla glue)
Steps
- 1
In a small bowl, mix 1 tsp of flour with 3 tbsp of water to create an edible glue.
- 2
Take a tortilla and make cuts with scissors from the edge toward the center without reaching the middle. Brush the edges with the flour and water mixture and fold the tortilla into a basket shape. Repeat with all tortillas.
- 3
Place the formed baskets on a baking sheet.
- 4
Cut the chicken breasts into small cubes and cook them in a skillet with a little oil until golden brown.
- 5
Add the chopped onion, red bell pepper, and garlic to the skillet with the chicken. Cook until the vegetables are tender.
- 6
Season the mixture with salt, sweet paprika, curry powder, and pepper to taste.
- 7
Stir in the heavy cream, mozzarella cheese, and chopped parsley. Mix well until you get a creamy filling.
- 8
Fill each tortilla basket with the chicken mixture. You can add a few extra cubes of cream cheese or mozzarella on top if desired.
- 9
Bake in an oven preheated to 180°C until the cheese melts and the tortillas are crunchy.
Notes
To glue the tortillas effectively, ensure the flour and water mixture has a pasty consistency. You can use additional soft cheese during the final assembly for extra creaminess.
