Ingredients
- 150 g cooked lentils, plain and rinsed
- 1 egg
- 3 tbsp unsweetened cocoa powder
- 1 tbsp yacon syrup (1 to 2 tbsp, to taste; maple syrup or date syrup are suggested alternatives.)
- 70 g almond flour
- 0.5 tsp baking soda
- 0.5 tsp apple cider vinegar
- 20 g 85% dark chocolate (Chopped; half may be reserved for the tops.)
Steps
- 1
Preheat the oven to 180 °C and line a baking sheet.
- 2
Blend the lentils, egg, unsweetened cocoa powder, yacon syrup, almond flour, baking soda, and apple cider vinegar until smooth.
- 3
Add the chopped chocolate and stir with a spoon. If desired, reserve half for the tops.
- 4
Shape 4 cookies on the lined baking sheet. Sprinkle with the reserved chocolate, if using.
- 5
Bake for about 20 minutes at 180 °C. Reduce the baking time for softer, gooier cookies; bake longer for firmer cookies once cooled.
Notes
To help promote iron absorption, serve the cookies with a source of vitamin C. The exact baking time adjustment for the desired texture is not specified.
