Ingredients

  • 1 lb salmon fillet (Skin removed and cut into bite-size cubes)
  • 1 tsp salt (For seasoning the salmon)
  • 1 tsp garlic powder (For seasoning the salmon)
  • 0.5 tsp black pepper (For seasoning the salmon)
  • 0.5 tsp paprika (For seasoning the salmon)
  • 1 tbsp olive oil (For coating the salmon)
  • 2 tbsp olive oil (For searing the salmon)
  • 3 tbsp soy sauce (Use regular or low-sodium soy sauce)
  • 2 tsp rice vinegar (For the sauce)
  • 1 tsp sesame oil (For the sauce)
  • 2 cloves garlic (Grated)
  • 0.5 tbsp chili crisp (Adjust to taste for spice)
  • 2 tbsp honey (For sweetness and glaze)
  • 2 tbsp unsalted butter (Melted in the skillet before adding the sauce)

Steps

  1. 1

Pat the salmon dry with paper towels. Remove the skin if necessary, then cut the fillet into evenly sized bite-size cubes so the pieces cook at the same rate.

  2. 2

Place the salmon cubes in a bowl. Add the salt, garlic powder, black pepper, paprika, and 1 tablespoon of olive oil. Toss gently until every piece is evenly coated.

  3. 3

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated garlic, chili crisp, and honey. Set the sauce mixture aside so it is ready when the salmon is cooked.

  4. 4

Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat until it shimmers. Arrange the salmon pieces in a single layer, leaving space between them so they sear rather than steam.

  5. 5

Sear the salmon for about 2 minutes on the first side, until deeply browned and the pieces release easily from the pan. Turn the cubes and cook for about 2 minutes on the other sides, working in batches if needed. The salmon should be nearly cooked through and opaque in the center.

  6. 6

Transfer the seared salmon to a plate, or move it to one side of the skillet if there is enough room to prepare the sauce without overcrowding.

  7. 7

Reduce the heat to medium. Add the unsalted butter to the skillet and let it melt completely, swirling the pan so it coats the cooking surface.

  8. 8

Pour the prepared sauce mixture into the melted butter. Stir and simmer for about 1–2 minutes, scraping up any browned bits, until the sauce is glossy and slightly thickened.

  9. 9

Return the salmon bites to the skillet. Toss gently in the thickened honey-garlic sauce until all the pieces are coated and the salmon is fully cooked, reaching 145°F / 63°C in the thickest piece.

  10. 10

Serve immediately while hot, spooning any remaining glaze from the skillet over the salmon bites.

Notes

The source transcript specifies searing the salmon for about two minutes per side, then thickening the sauce before tossing the salmon in it. Serve with rice, steamed vegetables, or noodles if desired. Refrigerate leftovers in an airtight container for up to 2 days and reheat gently to avoid drying the salmon.
