Ingredients

  • 0.5 cup cooked taco meat (Beef is specified in the method; use cooked, seasoned taco meat.)
  • 0.5 cup shredded Mexican cheese (Use half between the tortillas and the remaining half on top.)
  • 2 low-carb tortillas
  • 2 tbsp taco sauce
  • 0.25 cup diced vegetables (Vegetables of choice; the author used tomatoes, red onions, and jalapeños.)
  • refried beans (Optional; add to the first tortilla for a more traditional version. No amount was specified.)

Steps

  1. 1

Place one low-carb tortilla in the air-fryer basket or on an air-fryer-safe surface. Layer the cooked taco meat and half of the shredded Mexican cheese over the tortilla.

  2. 2

Cover the filling with the second low-carb tortilla.

  3. 3

Spread the taco sauce over the top tortilla.

  4. 4

Add the remaining shredded Mexican cheese over the sauce.

  5. 5

Scatter the diced vegetables over the cheese. The original version uses tomatoes, red onions, and jalapeños.

  6. 6

Air fry at 375°F for 10–15 minutes, until the pizza is heated through and the cheese is melted. Remove from the air fryer and enjoy.

Notes

For a more traditional Mexican pizza, the author recommends adding refried beans to the first tortilla, but no quantity was provided.
