Ingredients

  • 6 large flour tortillas (cut into squares)
  • 2 lb ground chicken
  • 1 shallot (small, minced)
  • 1 garlic bulb (whole bulb, minced)
  • 2 tbsp soy sauce (for chicken mixture)
  • 2 tbsp cane vinegar (for chicken mixture)
  • 1 tbsp fresh cracked pepper
  • 1 tsp sea salt
  • 0.5 cup soy sauce (for adobo sauce)
  • 0.5 cup cane vinegar (for adobo sauce)
  • 0.5 cup brown sugar
  • 3 tbsp hot honey
  • 1 tbsp whole peppercorns
  • 1 bay leaf
  • crispy garlic (for garnish)
  • green onions (for garnish)

Steps

    In a large mixing bowl, combine the ground chicken, minced shallot, minced garlic bulb, 2 tablespoons soy sauce, 2 tablespoons cane vinegar, cracked pepper, and sea salt. Mix thoroughly until the seasonings are evenly distributed.

    Stack the 6 large flour tortillas and cut them into equal-sized squares.

    Spread a layer of the chicken mixture across each tortilla square, then stack the squares back on top of each other.

    Slice the stack into 3 long strips. Thread skewers through the strips, then slice between the skewers to create individual kebab units.

    In a small cast iron pot or smoker-safe saucepan, combine the 1/2 cup soy sauce, 1/2 cup cane vinegar, brown sugar, hot honey, peppercorns, and bay leaf. Mix well.

    Preheat your smoker to 350°F (175°C).

    Place the skewers and the pot of sauce into the smoker.

    After 15 minutes of cooking, begin basting the skewers with the adobo sauce every 10-15 minutes.

    When the internal temperature of the chicken reaches 165°F (74°C), remove the skewers from the smoker.

    Leave the pot of sauce in the smoker to continue reducing until it reaches a thick glaze consistency.

    Brush the thickened glaze over all sides of the kebabs.

    Garnish with crispy garlic and chopped green onions before serving.

Notes

The author uses a Char-Griller Gravity Fed 980 smoker. If you don't have a smoker, an oven set to 350°F will work, though you will lose the smoky flavor profile.
