Easy Chicken and Bacon Pizza Roll-Ups

Ingredients
- 2 Chicken breasts (sliced in two)
- 4 oz Bacon (fried and chopped; can use macon or omit)
- Garlic and herb seasoning (Ina Paarman's brand suggested)
- Chicken spice (Robertsons brand suggested)
- Ground cumin (to taste)
- Ground coriander (to taste)
- Italian herbs (to taste)
- Paprika (to taste)
- Cayenne pepper (a pinch)
- Salt (to taste)
- Black pepper (to taste)
- 4 Tortillas (store-bought or homemade)
- Tomato sauce (for spreading)
- Barbecue sauce (for spreading)
- Cottage cheese (for spreading)
- 1.5 cup Cheese (shredded, divided)

Slice the chicken breasts in half horizontally to create thinner cutlets.

Season the chicken thoroughly with garlic and herb seasoning, chicken spice, ground cumin, ground coriander, Italian herbs, paprika, a pinch of cayenne pepper, salt, and pepper.

In a pan over medium heat, fry the bacon until crispy. Remove the bacon from the pan and set aside, keeping the rendered fat in the pan.

In the same pan with the bacon fat, fry the seasoned chicken for about 5 minutes on one side.

Flip the chicken over. Add a small dash of water to the pan, cover immediately with a lid, and allow the chicken to steam until the water has completely evaporated and the chicken is cooked through.

Remove the chicken from the pan and shred it. Chop the cooked bacon into small pieces.

Warm the tortillas slightly so they are pliable and won't break when rolling.

Lay out a tortilla and spread with your choice of base sauce (tomato sauce, barbecue sauce, or cottage cheese).

Top the sauce with a layer of shredded cheese, followed by the shredded chicken and chopped bacon.

Roll the tortilla up tightly. Repeat with the remaining tortillas and fillings.

Cut the rolled tortillas into 2-centimeter wide slices (roll-ups).

Place the roll-ups cut-side up in an oven tray and sprinkle a little more cheese over the top.

Bake in a preheated oven at 200°C (400°F) for 10 to 15 minutes, or until the cheese is melted and bubbly.
Notes
The author suggests adding spinach for greenery if available. You can vary the base sauce for different flavors (tomato, BBQ, or cottage cheese). If you don't eat bacon, you can substitute with macon or omit it entirely.
