Ingredients

  • 500 g chicken breast (sliced into strips)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 red onion (sliced)
  • 30 g sun-dried tomatoes (optional; author omitted but mentioned in original)
  • 1 tbsp olive oil
  • 1 tsp paprika powder (divided)
  • 0.5 tsp cumin (author substituted with beef bouillon powder)
  • 0.5 tsp garlic granules
  • salt (to taste)
  • black pepper (to taste)
  • 0.5 lemon juice (a good squeeze)
  • 30 g parmesan cheese (grated)
  • 4 tortilla wraps (large)
  • 150 g low-fat Greek yogurt (for the sauce)
  • 1 tbsp Sriracha or Buffalo sauce (to taste)

Steps

    Preheat your oven to 400°F (200°C).

    Slice the chicken breast, red pepper, green pepper, and red onion into thin strips.

    Place the chicken and vegetables onto a large baking tray.

    Add the sun-dried tomatoes (if using) to the tray.

    Drizzle with olive oil and season with paprika, cumin (or beef bouillon), garlic granules, salt, and pepper.

    Add a good squeeze of fresh lemon juice over the mixture.

Notes
