Ingredients

  • 12 oz fresh Shanghai noodles (or fresh spaghetti, linguine, or fettuccine; separated to prevent sticking)
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp water
  • 5 garlic (cloves, finely minced (use at least 3))
  • 2 tbsp butter
  • 1 tbsp olive oil

    Bring a large pot of water to a boil.

    While the water is coming to a boil, separate the fresh noodles by hand to ensure they do not stick together during cooking.

    In a small bowl, combine the soy sauce, oyster sauce, fish sauce, sugar, and water. Whisk well until the sugar is dissolved and the sauce is fully combined. Set aside.

    Add the noodles to the boiling water and cook for 2 to 4 minutes until tender.

    Drain the noodles and immediately shock them with cold water to stop the cooking process. Set aside.

    Prepare the garlic by smashing the cloves with the side of a knife and then mincing them very finely.

    Place a pan over medium-high heat. Add 2 tablespoons of butter and 1 tablespoon of olive oil.

    Once the butter has melted and the pan is hot, add the minced garlic.

    Sauté the garlic for about 1 minute until it is very fragrant, being careful not to burn it.

    Add the prepared sauce mixture and the cooked noodles to the pan. Toss everything together until the noodles are thoroughly coated and heated through.

Notes

The author recommends using fresh noodles from the refrigerated section of an Asian market for the best texture. The sugar is essential to balance the saltiness of the fish sauce and soy sauce.
