Steak Salad with Charred Corn & Spicy Ranch

Ingredients
- 2 ribeye steaks
- salt (plenty, for seasoning steak)
- black pepper (plenty, for seasoning steak)
- smoked paprika (for seasoning steak)
- 1 tbsp olive oil (for searing steak)
- 1 tbsp butter (for basting steak)
- 2 corn cobs
- 1 tsp olive oil (for brushing corn; or avocado oil)
- salt (for corn)
- 1 cup cherry tomatoes (chopped)
- 0.25 cup red onion (chopped)
- 1 avocado (chopped)
- 0.5 cucumber (chopped)
- 2 tbsp fresh parsley (chopped)
- 2 tbsp olive oil (for salad dressing)
- 1 tbsp lemon juice (or lime juice)
- salt (to taste, for salad)
- black pepper (to taste, for salad)
- 0.5 cup sour cream
- 1 tbsp ranch seasoning powder
- 1 clove garlic (minced)
- hot sauce (to taste)

Season the ribeye steaks generously with salt, black pepper, and smoked paprika.

Heat a little olive oil in a very hot pan or on a grill. Sear the steaks until cooked to your liking (approximately 2 minutes per side for medium-rare).

Add butter to the pan at the very end and baste the steaks quickly with the melted butter.

Remove the steaks from the heat and let them rest for 5 minutes before slicing against the grain.

Cook the corn cobs by boiling or microwaving until just tender. Let them cool slightly.

Brush the cooked corn with olive oil (or avocado oil) and sprinkle with salt.

Char the corn in a hot pan, on a grill, or over an open flame until the kernels are golden and slightly blackened. Cut the kernels off the cob.

In a large bowl, combine the charred corn kernels, chopped cherry tomatoes, avocado, cucumber, red onion, and fresh parsley.

Toss the salad with olive oil, lemon or lime juice, salt, and pepper. Let it sit for a few minutes to allow the flavors to meld and become juicy.

In a small bowl, whisk together the sour cream, ranch seasoning powder, minced garlic, and hot sauce until the dressing is smooth and creamy.

To serve, spread the corn salad onto a large plate or platter, top with the sliced steak, and drizzle with the spicy ranch dressing.
Notes
For a healthier alternative to the spicy ranch, you can make a vinaigrette with olive oil, apple cider vinegar, honey, mustard, and garlic.
