  • 1 small onion (Finely grated or minced; about 110 g edible portion.)
  • 2 garlic cloves (Finely grated or minced.)
  • 2 tsp baharat spice blend (For a substitute, use 1 tsp ground cumin, 1 tsp sweet paprika, and 1/2 tsp ground cinnamon.)
  • 1 tsp kosher salt (Plus more as needed.)
  • 0.5 tsp black pepper (Ground.)
  • 0.25 cup fresh parsley (Finely chopped; estimated from the dish description and typical preparation.)
  • 5 six-inch pita breads (About 1/2 inch thick, fresh, supple, and preferably fluffy rather than thin.)
  • 3 tbsp extra-virgin olive oil (For skillet-toasting.)
